Sauteed Escarole Recipe - NYT Cooking

Escarole is a much underrated vegetable. It's great in soups. I made the above recipe with some changes; omitted ginger and scallions and added crushed red pepper. Once it began to wilt, turned down the heat to medium-low, covered and simmered a few minutes. Very delicious as a side. I had it for lunch.
